Don't grieve over cherries. Enjoy the pineapple and mangoes!

I have had a few friends lose parents recently. I feel for the pain they must be going through.

There are so many things  that we can grieve over, death, divorce, moving, unemployment, infertility, mental illness just to name a few.   It is amazing the lessons we can learn when we are grieving or struggling with something. I will admit I hate struggling or experiencing difficulty, but always when I look back I am amazed with how much I have learned.

So even though the cherries might not be available we can look for the pineapple or mangoes that are in our life.  No matter what we are experiencing,  we can find joy in our life. Sometimes it is hard to find it, but if we look hard enough can find so many blessings.

One thing I know is that we came to this life to receive a body and to progress.  Sometimes we need to go through hard times to learn the lessons we need.  Usually, I don't understand why I need a particular lesson, but I have enough trust in my Heavenly Father to believe that all things truly will work for my good.

Last week a friend and I went over to another friend's home who recently lost her father.  We had  collected money to get a gift for her from people in our neighborhood.  We got  her the Hansen statue, "Toe Dancing (below) and a gift card to take her family and mom out.   We had a wonderful conversation talking about how each of us had lost a parent or both parents.  The spirit was so strong as we shared our pain. In our conversation we each shared some of our experiences with death.  I shared my last evening with my mom before her death.  It happened almost 28 years ago, but I still found myself doing the very ugly cry. The one I try to never do in public.   It amazes me how grief comes in waves.  We each shared  how we have been blessed and influenced by our deceased parents.   I feel so grateful that I have felt both of my parents helping me from the other side. Because frankly, I need all the help I can get.   It is amazing how our grief can bring us closer to one another.

And maybe, like SO many things. It's just another one of those lessons that we must learn over...and over...and over again.  At least that has been my experience.   

I forgot to mention in my last post that Matt's brother Tony and his wife Kathy came into town on Saturday for a couple of hours from Reno.  I was gone at TOFW so I missed them.  Below is the picture they took together.  Matt said they had a wonderful visit.

Busy couple of weeks!!!

This last week as been filled with a lot of adventure.   Matt has been having a lot of dental pain in his  mouth.  He finally went to the dentist and found out he needed a root canal.  Of course he decided not to go that route.  Silly man---he decided to just have the tooth pulled.  It was the last tooth on his top right side so he figured he didn't need it.  Anyways, when they took it out they also took out some of his bone with it, so it was pretty bad and he was pretty miserable.  After they took it out the dentist said it was smart he chose to go this route as it was worst then he could have imagined.  

  Unfortunately, I already had plans to go to a  TOFW event  here in SLC, with my girlfriend so I wasn't home to pamper him.  Not to mention he also had to work on Saturday.  And we had one of Kara's friends over for the weekend while her parents were out of town.  


I loved the TOFW and I will record some of the things I learned there in a few days.   It was fun to go with Diane.  We have been friends since we were 18.  We always have so much fun together.

Kara also had a performance that I missed, but that Spencer was able to attend with Kara.  She did really good and luckily, she will be performing the same song next month!

Matt and I had an opportunity to dress up for Halloween on Saturday.  We were Thing 1 and Thing 2. I love seeing what others dress up for Halloween.  I am excited to see the cute trick or treaters who will be coming to our home tomorrow.  

Kara has her first choir concert at her new school last night.  All of the musical groups did wonderful!  It was so fun to watch.  They did a Halloween themed concert and it was fun to see them all SHINE!!!!

They did a Thriller song and it reminded me of going to Thriller a couple of weeks ago with some of my friends.   Below is a picture of us and one of their Zombies.  Thanks Camille for sharing your picture. 
Also this weekend Coby went to Manti with his girlfriend Colleen. She got her endowments out there. She will be leaving for her mission in early February, to serve in Thailand.  I know she will be an awesome missionary..

This and that....

The last couple of  weeks have flown by way too fast for me.   A lot has happened, but most of it has seemed to be just busy work.  

Matt has traveled a lot recently.  He was in Dallas and then in Wyoming for a week.  We sure miss him when he is gone.  

Kara and Matt went to a BYU football game together.  It was a quick game as they were taking other people with them.    

I have been working really hard planning a family reunion. It has been hard just deciding on a week and a location that will work.  We have changed locations at least 4 times and changed what wee it would be.  It has been especially fun because we have almost booked each location  and then had to change, due to conflicts.  I am grateful that  my sister in laws, Miriah and Suzanne have been willing to help me.   Hopefully, we have the location and week figured out for sure by Monday.


I have enjoyed our Fall Recess days this week. It has been great to recharge and it has been fun to spend time with my family. I am grateful I had time to just be able to leisurely read.  It sure helps me relax and unwind.

Kara gave an excellent talk today on being grateful.  I am so grateful she is my daughter. I am grateful for each of my children and the lessons I learn from them daily.  I am grateful for the opportunity I had to give a lesson on the Holy Ghost last week to all the young women.  I am so grateful for the Holy Ghost and I feel like it is one of my most treasured gifts ever!!!!    I am so BLESSED!!!

General Conference Traditions

Conference weekend always goes by too fast.   It is always a busy, but relaxing weekend! Below are some of the food traditions that I make for Conference Weekend.    I always try to cook ahead, but it seems like on Saturday night I still am finishing up. 
Saturday morning we always have this before conference starts.  Most of the recipes I have listed aren't  very healthy, but of course, very delicious!
CREME BRULEE FRENCH TOAST  
1/2 cup unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
Bread, sliced, to cover butter mixture
5 large eggs
1 1/2 cups half-and-half
1 teaspoon vanilla
1/4 teaspoon salt
In a saucepan, melt butter, brown sugar and corn syrup. Pour into a 9-by-13-inch glass baking dish. Arrange bread pieces on top. Beat together eggs, half-and-half, vanilla and salt. Pour egg mixture over the top of the bread. Cover and chill overnight in the refrigerator. The next morning, bake uncovered at 350 degrees for 35-40 minutes.

On Saturday evening  I make the boys something in the crock pot and then Kara and I have our Girl's Night out.  We usually  go out for dinner and then we usually go  to Deseret Book.    On Saturday night  we went to Los Cuco's.  It had very yummy Mexican Food. My friend Kristie told me I just had to try it and she was right.  I had a Stuffed Avocado.   I have never had anything like it and it was out of this WORLD!!!!
 After going out for dinner we headed over to the new Deseret Book in Draper.  We walked in and signed up for the drawing seconds before they announced the winners.   30 seconds later  I became the winner of the new book, "Savoring the Seasons with Our Best Bites."  What  a fun  book, with a picture besides each recipe. 

After the Priesthood session the men in our family go out for ice cream.
On Sunday morning our tradition for breakfast food is the following:
BUTTERSCOTCH PULL-APARTS

2 dozen Rhodes dinner rolls or 2 loaves Rhodes white dough, thawed
1 (3 3/4 or 4 oz.) pkg. butterscotch pudding mix (not instant)
1 c. chopped walnuts or pecans
1/2 c. brown sugar, firmly packed
4 tbsp. butter, softened
1 tsp. ground cinnamon
In mixing bowl combine pudding mix, nuts, sugar, butter and cinnamon. Stir until crumbly. (If using white or sweet roll dough cut each loaf in half lengthwise, then in 6 pieces crosswise. Each loaf should have 12 pieces.) Sprinkle on half of topping in bottom of well greased 12 cup bundt or tube pan. Arrange half the dinner rolls (or dough pieces). Sprinkle with half of remaining topping. Add rest of rolls (or dough pieces) and sprinkle with remaining topping. Cover and let rise in warm place until almost doubled, about 1 hour. Bake in a 350 degree oven for 35 to 40 minutes. Turn out of pan immediately and serve warm.





We also have my sister in law's recipe of Hash Brown Quiche
HASH BROWN QUICHE

1 (24 oz.) pkg. thawed frozen hash browns
1/3 c. melted butter
1 c. shredded hot pepper cheese
1/2 c. shredded Swiss cheese
1/2 c. shredded Cheddar cheese
1 c. diced cooked ham
1 c. cream or milk
 6 eggs
1/4 tsp. salt
Grease quiche pan with shortening or butter. Press thawed hash browns between paper towels to remove excess moisture. Fit hash browns into pan to make a solid crust. Brush potato crust with melted butter, being sure to brush top edge too. Bake crust at 425 degrees for 25 minutes.Remove crust from oven and fill with layers of the 3 cheeses and the ham. Beat cream, eggs and seasoned salt together. Pour egg mixture over cheeses and ham.
Return pan to oven. Reduce heat to 350 degrees and bake quiche until knife inserted near edges comes out clean (about 30 minutes).
For lunch on Sunday I make these easy sandwiches along with fruit and chips.

Ham and Cheese Sliders
adapted slightly from the
24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce (you probably could half this...I had plenty extra)
1 T poppy seeds
1 1/2 T yellow mustard
1 stick butter, melted
1 T minced onion
1/2 tsp. Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.
For dinner after conference I try to do something simple in the crockpot.  This year I had a lot of people to feed so we had  Baked Potato Soup, Salad and rolls.

Crock Pot  Loaded Baked Potato Soup
6 large potatoes, peeled and cubed

1 large onion, diced
1 quart chicken broth
3 garlic cloves, minced
1/4 cup butter
Salt to taste
Pepper to taste
1 cup cream or 1 cup 1/2 and 1/2 cream
1 cup shredded sharp cheddar cheese
Garnish: chives, sour cream, bacon, and cheese
Directions:
Combine first 7 ingredients in a large slow cooker and cook on high for
4 hours or low for 8 hours (potatoes should be tender). Then you will
need to mash potatoes until coarsely chopped and soup is slightly
thickened. Stir in cream and cheese. Garnish with toppings.
Simple and Satisfying!
Such a simple and tasty soup that really fills you up! We loved the spin on regular potato soup… adding bacon, sour cream, cheese and chives to make it like the oh so yummy loaded baked potato! Served with cornbread, this was SUCH a yummy meal! We hope you guys enjoy this recipe as much as we did, especially with that crisp fall air we seem to be seeing more and more of! Happy Crockin’!

This year the two desserts I made were the following:
Chocolate Maroon dessert

1 pkg. chocolate cake mix
1/3 c. butter
2 eggs, divided
1 1/4 c. (14oz. can) sweetened condensed milk
1 tsp. vanilla
2 c. chocolate chips
1 1/3 c. flaked coconut, divided
3/4 c. nuts (optional)
Beat cake mix, butter and one egg in large mixing bowl until mixture is crumbly.  Firmly press into bottom of a greased 13x9 inch baking pan.
Combine sweetened condensed milk, remaining egg and vanilla in medium bowl.  Stir in chocolate chips, one cup coconut (we go ga-ga over coconut around here lately…maybe that’s because we’ve discovered how good it is in smoothies) and nuts. 

I always print out the sugardoodle.com General Conference packets.  Then for FHE we talk about the things we learned at conference. 
 For FHE I made Trisha Yearwood's Carrot Cake this was so delicious!!!!

3 cups granulated sugar
1 1/2 cups corn oil
4 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups walnuts (finely chopped)
1 1/2 cups grated coconut
1 1/2 cups pureed carrots (about 6 medium, boiled)
3/4 cup crushed pineapple (drained)

Cream Cheese Frosting
2 (8 ounce) packages cream cheese (room temperature)
3/4 cup butter (room temperature)
6 cups confectioners' sugar
2 teaspoons vanilla extract
2 cups walnuts (finely chopped)

Directions:
1 FOR THE CAKE: Preheat the oven to 350°F Grease the bottom of three 9-inch, round cake pans with cooking spray, line with circles of parchment paper, and grease the paper with cooking spray.
2 With an electric mixer, cream the sugar, oil, eggs and vanilla. Sift together flour, baking soda, cinnamon and salt. Add the dry ingredients to the sugar mixture. Add the walnuts, coconut, carrot puree and pineapple. Beat until smooth.
3 Divide the batter evenly among the prepared pans and bake for 40 to 45 minutes at 350°F or until a toothpick inserted into the center comes out clean.
4 Cool the layers in the pans for about 5 minutes. Run a knife around the edges of each pan and turn the layers out onto wire racks that have been sprayed with cooking spray. Cool the layers completely before frosting. (Note: After the layers have cooled, cutting will be much easier if you wrap each cooled cake layer in plastic wrap and refrigerate overnight.).
5 CREAM CHEESE FROSTING: Combine the cream cheese and butter in an electric mixer and beat until smooth. Slowly add the confectioners' sugar and continue beating until fully combined. Add the vanilla.
6 Slice each cake layer horizontally in half using an electric knife. Ease a piece of parchment between the layers and lift off the top portion. Frost the bottom slice then add the next layer. Continue until the entire cake is frosted.
7 Press the chopped walnuts into the sides of the cake. Refrigerate until ready to serve.

I love this Weekend........

I am so excited for General Conference this weekend.  The first weekend in October and April are my favorite weekends of the year.   I get to eat yummy food and be fed spiritually.  And I get to spend quality time with my family!!!!!!  

 

 I have heard many say, " The excitement members feel about General Conference could be  compared  somewhat akin to how many feel about the Superbowl.   I think the comparison is rather silly , but once again, as we draw closer to the big event, I have to admit that I do feel that way -- and more!"   Kathyrn Skaggs

For you Dad......

21 years. In life, that's a long time.  But, what is it when you have missed someone that long? Lived without them present in your every day? Grief and Sadness are strange things. Time seems to be the only balm to coat it's edges. When you so desperately miss someone, Time feels slow and cruel. There is no walking around it, only through it.

I've come to understand a lot in the last 21 years. Well, as far as Grief goes. In the beginning, it's all consuming. Time seems to slowly gather it in and tuck it away, only to be unleashed in unannounced visits. The heart ache never disappears. I really don't think it's supposed to. Love doesn't  work that way.

For some reason this day is harder for me than his birthday and Father's Day.  This ordinary October  day. The one 21 years ago that slowed my world and forced it onto a different path. One not of my choosing.
 But in the Sad, even within it's darkest depths, there has always been a light. At times, it's been hard to see it. At others, it's so blinding it makes me smile. When you hold Love and Grief together, I guess that's what happens.

My dad would want me to smile today. To chase away the Sad. To look at his grandkids and let them know they are cherished.  And to know, with unwavering faith, that he is here, no matter the distance.

So, for today. I will smile.

And I will remember.

Little Things....

Moving Day!!!  Today Matt and his employees moved into their  new temporary office.  And it isn't too far from our house.  Hopefully, their permanent location will be just as close.  Now, when Coby comes to visit  he can sleep in his room! 





Above and below are Kara's school pictures.  I think she looks BEAUTIFUL!!!!!  She is in 10th grade and is 15 1/2 years old.  

Kara now has 5 piano students. WOW!!!   She is busy taking a Jazz dance class and also an Irish Dance class.   She is loving it.  We haven't really focused on dance for a while and instead focused on piano and voice so this has been a fun adventure for her.  

 My friend Lauri showing me how she would hold our puppy.  It made me giggle so hard. 


 On Saturday night I was privileged to  attend the R.S. General Broadcast at the Conference Center.  It was a wonderful evening, the spirit was strong and I was touched.  My heart is always tender when I hear personal stories of others dealing with adversity and death.


 Sis. Burton:  When we have the doctrine deep in our hearts, we will feel the power of the Atonement.
Sis. Stephens:  Leave the world behind and gain the Kingdom of God.
Sis. Reeves:  Cast your burdens upon Him. Jesus is perfectly compassionate. We can go to Him and not be alone in our trials.


I loved Pres. Eyring’s description of a circle. The Savior is always in the circle. It is up to us to invite all sisters to sit in the circle. In the circle, together we can coordinate a plan, make it a team effort and act as an organized society where we will increase in love as we serve one another. Just as Lucy Mack Smith hoped for, and prophesied, so long ago.

This is what I heard in our meeting tonight. And I thought it was beautiful, inspiring, and hopeful for our future as women in the Church.

As my friends and I were leaving the Conference Center on Saturday evening the Salt Lake Temple was so beautiful.  I am so grateful to live so close to it.   I am so excited for General Conference this weekend.  It is my favorite weekend that I am so grateful happens twice a year.

Things I loved this week:
Learning how to can Salsa with Jen.  She was so kind to let me come to her home and teach me the ins and outs.  And the salsa tastes delicious.

Going to the R.S. Broadcast with friends and being able to go out to eat with them before and after the broadcast.

Putting out my Halloween decorations!!!
